KIWI BISCUITS

Ingredients

Makes 14 to 16 cookies.

1/4 - 1/2 cup (100 g) softened butter
1/4 cup (50 g) white sugar
2 Tablespoon sweetened condensed milk
1 Tablespoon Baking powder
1 cup (100 g) flour
3/4 cup (100 g) chocolate chips*

*In New Zealand, chocolate chips are more like tiny bits of chocolate, much smaller than the American formed 'chip'. If using this recipe with standard chips, chop them up before using. Also, chips can be substituted with raisins or half & half of each.

Instructions

  1. Combine butter and sugar until creamy.
  2. Add milk, and stir. Add baking powder and flour and combine until just mixed. Add chocolate chips and mix all together.
  3. Roll dough into balls (golfball size or smaller) and place on an ungreased cookie sheet. Press down with fork tines.
  4. Bake in a moderate over at 350 F (180 C) and remove when the bottoms become golden brown.

NEW ZEALAND FOOD

New Zealand cuisine derives from various sources, most especially British and Māori in the early days, the United States post-World War II, and Australia, Southeast Asia, East Asia, and India since 1980. The best cuisine from New Zealand emphasises the quality and freshness of New Zealand produce from land and sea, which is readily available in an island nation which bases its economy on agriculture. Similar to the cuisine of Australia, the cuisine of New Zealand was traditionally simple fares such as "meat and three veg" and increasingly modified by Mediterranean and Pacific Rim tastes as the country becomes more cosmopolitan, albeit at a more gradual pace than Australia. Dinner is the main meal of the day, when families gather and share their evening together.
